Turkey has long been at the heart of the holiday season. There are so many ways it can be eaten, but roasting a whole turkey, I believe, is the best way to enjoy it! And cooking one is simpler than it looks! To stay true to the paleo way, be sure to use clarified butter or ghee to rub your turkey with instead of vegetable or olive oils. When vegetable or olive oil is heated to high degrees their molecular structure transforms and becomes toxic! Butter is heat stable. Therefore, it is safe to use and will not contaminate your beautiful bird. Furthermore, clarified butter or ghee do not contain milk solids. The milk solids in the butter may make your turkey spotted and that just will not do. Have a lovely Thanksgiving! Enjoy!
- turkey
- clarified butter or ghee
- herbs (rosemary, thyme, sage)
- lemon
- Celtic Sea Salt
- Follow the directions on your turkey for temperature and baking time.
- Rub it with clarified butter or ghee instead of vegetable/olive oil, so your turkey will brown nicely. Butter is heat stable. It's molecular structure will not turn toxic with high levels of heat as does vegetable or olive oil. Make sure if you use butter to get clarified butter.
- Sprinkle bird with salt.
- Instead of filling with stuffing. (made separately) Fill with fresh herbs like rosemary, thyme and sage and also lemons
- Remember to baste!
