Before eating paleo, cauliflower was not a vegetable I ate very often…if ever. Typically, it would be left on my plate right along with snap peas. Since going paleo, cauliflower has become one of my favorite vegetable staples. I never realized how diverse of a vegetable it can be! I make it into rice, mash and also make a great roasted medley out of them. This cauliflower mash is a great replacement for mashed potatoes and is just as yummy.

This is one of the easiest dishes to make and adds vastly to any meal. The one thing to watch out for is while blending, do not over blend! You want to stop blending right when all the chunks are mashed. If you continue to blend, the consistency will be too runny.

- 1 head of cauliflower
- 2-3 tablespoons pastured grass-fed butter
- 1-2 tablespoons water or homemade chicken broth
- Celtic Sea Salt to taste
- black pepper to taste
- Cut cauliflower into florets
- Put cauliflower into a metal colander and place on top of boiling water. Cover with a lid and steam until a fork inserts into the cauliflower with ease. Around 15 mins.
- Place cauliflower, butter, water/chicken broth, salt, and pepper into a blender or food processor.
- Pulse until just mashed. Make sure to not over mash. They'll be too runny.
