Put cauliflower into a metal colander and place on top of boiling water. Cover with a lid and steam until a fork inserts into the cauliflower with ease. Around 15 mins.
Place cauliflower, butter, water/chicken broth, salt, and pepper into a blender or food processor.
Pulse until just mashed. Make sure to not over mash. They'll be too runny.
